Italian Inspired Cheese from the Prairies

In the rolling hills of Tuscany, the town of Pienza whispers tales of the Renaissance, where every cobblestone street leads to a treasure trove of artisanal delights. It is here that the art of crafting Pecorino cheese has been perfected through generations, with the rich, fragrant sheep’s milk transforming into wheels of golden delight.

Far across the ocean, the prairies of Alberta stretch wide and free, a tapestry of golden fields and endless skies. Here, too, the craft of cheese-making has found a home, blending the old-world techniques of Tuscany with the pioneering spirit of the Canadian heartland. The Cheesiry stands as a bridge between these two worlds, where the romance of Pienza meets the rustic charm of the prairie fields.

Together, they weave a story of tradition and innovation, where every bite of cheese carries the essence of both lands. It is a celebration of nature’s bounty, a testament to the timeless art of cheese-making, and a journey that brings a taste of Tuscan romance to the heart of the Canadian prairies.

Pecorino cheese has a storied history that dates back to ancient Rome. Made from sheep’s milk, Pecorino is one of Italy’s oldest cheeses. The name “Pecorino” comes from “pecora,” the Italian word for sheep. Different regions of Italy produce their own varieties, but Pecorino Romano is especially famous and was even a staple in the diets of Roman soldiers. The cheese is known for its bold, salty flavor and is still cherished today, whether enjoyed on its own or grated over pasta. It’s truly a cheese with a rich and delicious history!

All of our milk products are made with 100% grass fed sheep milk from our farm. Our sheep are pasture raised and they are only milked in the summer months when there is fresh green grass.

  • Sheep’s milk, cultures, and rennet form the base elements of the majority of our artisanal products. In select products , salt is incorporated to enhance flavor profiles. It is worth noting that many commercial dairy items available in stores often contain modified milk ingredients— this is a lower grade milk powder blended with vegetable oils and sugars. Our feed representative once promoted this as the industry standard; while it was more affordable than the premium milk replacer we provide to our lambs, we remain committed to quality and authenticity in all that we produce.

  • All of our products are available on farm only. From June to October we have a Farm Stand you are welcome to. Open 10 am-7pm daily. The array of products will change throughout the months dependant on availability. With the hard raw milk cheeses available in August after aging 2 months
